The Skamania Lodge

This is the place where we stayed this weekend, The Skamania Lodge. Its right on the Washington / Oregon boarder and the surrounding area takes your breath away with its beauty. The weather couldn't have been better, in the mid 70's every day and the wild flowers were in full bloom. This is the view of the lodge as your driving up the drive to it.


We took a hike the first afternoon we were there. There are three on the hotel grounds. It was a short 1 mile hike, but after we got half way through I read the flier to find out it was the most challenging. Lots of hills up and down.

This was the view of the river through the trees on the hike. The white thing in the center of the picture is a bridge that goes across the Columbia River....from the Washington side to the Oregon side. Its named the Bridge of the Gods.

Sitting on the patio of the lodge under that big picture window this is what your view is...The Columbia River and Oregon on the other side.


Inside the lobby looking out the window. The lobby was full of rocking chairs, sofas, game tables. Its called the gathering place because it was full of people constantly. Families playing board games, enjoying a cup of coffee or a glass of wine, or just sitting and reading a book. So relaxing, especially early in the morning.
Free Starbucks coffee in the lobby day and night....ahhhhhhh.

Standing in front of those windows looking back into the hotel lobby. That stone fireplace is three stories tall with full size canoes hanging from it. I can vouch for how comfortable those rocking chairs are....I rocked and rocked...
They had a person playing the piano and another playing the flute on Sat night. I rocked in that chair for about an hour listening to them.

Kids and adults played football on this grass until the sun went down. It was so warm and relaxing...quite entertaining to watch them play ball too.

Paul went out in the lawn to and used the large rocks for a tripod to take this picture. It was well after sunset. I think I was the lone person sitting out on the patio.



That's a little bit of our trip.
The next day we went to visit the surrounding wineries....so much fun.
We never got to the pool or to the hot tub. No time to play golf or to take a bike ride...the hotel has bikes for the use of the guests which would have been fun. Next time...
We'll be going back again, soon I hope.

How to stay on a diet...

when you live with someone who doesn't know the meaning of the word.
How in the world can I stay on a diet when I live with someone who eats like this?

after polishing off a bowl of clam chowder.

I love how supportive he is of my diet...look at him...doesn't rub it in or anything.
So how can I happily eat my salad with dressing on the side while watching him eat that?




I really was quite happy with my salad, really!
I love a good salad...Shrimp Louie with olives, lemon, hard boiled egg parm cheese and a nice piece of french bread. Dont know why I dont make them at home like this.


But it didn't hurt either that within an hour after eating this, he was wishing he'd skipped the extra grease and gone with the salad too...live and learn: ) Ha! revenge is mine

Here we go...I'm really very shallow, but I'll do my best to come up with something random. I don't promise it will be entertaining.
  1. I love lotion. I cant stand having dry skin so I have at least 20 bottles of it at all times. Seriously....Two at my desk, two in the car, one in my purse and at least two in just about every room of the house...several in my bedroom. Different scents depending on my mood, some for my feet only, some for hands only...and so on. Its a sickness
  2. I'm ultra sensitive to motion so I get motion sickness very easily. Keeps me away from boats and carnival rides. No big loss in my opinion :)
  3. I've lived in two countries, three different states and 14 different houses in my life...so far.
  4. I resisted going to Hawaii until 2000. I hated that everyone said how beautiful it was, how pretty it was, how blah blah blah it was... and I never wanted to go just for that reason. Notice my stubborn streak? Since I "consented" to go there in 2000 I'm now one of those annoying people that cant stop talking about it and I have been back almost every year since 2000...blah, blah blah :)
  5. This one's going to date me...the first concert I ever went to (without my parents) was Ray Charles and the Supremes
  6. I believe there are cat people and dog people. I'm a dog person. I do like cats, but I'd never have one. I believe if you have a dog it should be an indoor pet. Why have a pet that lives outside? That's not a pet, its just something you feed.
  7. My high School senior party was in Disneyland. We flew down from San Jose at 6 in the evening, had the entire park all to ourselves all night long until 6 in the morning, then flew home. The cost was $40.00 and that included airfare :)
Okay that does it. Thanks Liberty, that was kind of fun.

and since I haven't shared any pictures in awhile, here's a few pics from Mothers day.My Mom's getting use to me making her have her picture taken but she has a camera smile she uses in every picture. Im just happy she's letting me take her picture. Here's my daughter Jen, me, Mom and my SIL and another with just me and Jenn. Good thing the sun wasn't out or that metal in my mouth would have blinded you with its glare.

oh yeah, gotta tell you about Pauls funny comment the other night.
Still has me chuckling whenever I think abut it....it went like this.

I got new pillows for our bed...nice big fluffy ones because I hate when they get all packed down and hard.
Paul likes them hard, but thats tough. Cant have the bed look unbalanced with one side having puffy pillows and the other side having hard flat ones.
So I get new ones a few times a year...what the heck, its only $13.
thats for two. Yep, I buy the pricy ones at costco.
Living large....
anyway, new pillows always take a little bit of time to get use to.
So, Paul doesnt know I've put new pillows on the bed
cause if I tell him he's gonna whine about it.
So, he gets into bed the other night and I turn off the light.
He hasnt said a thing. But Im waiting...
then I hear this quiet voice say

I feel like my head is stuck in a biscuit..............................

Betty Crocker Prize-Winning Recipe 2007

So after my healthy food post from the other day I think its an about face for me today.
For years I've followed the Betty Crocker recipe contest and they just announced this years winner.
Cooking contests in general are so fun to me.... I love waiting to see the unique recipes that people come up with. One of the most fun shows to watch on TV is any kind of cook-off show. chili cook off, BBQ cook off, pie contest, I love them all.
So anyway, they announced the winner of the Betty Crocker 2007 contest this week and the winner this year is this yummy-licious Chocolate-Topped Peanut-Toffee Bars. Dont these look amazing???
The secret ingredient to these yummy looking bars is...... (insert drum roll here).....crushed potato chips !

That sounds soooo good to me. Im a lover of anything salty/sweet and the article says the Potato chips are the secret ingredient that keep sweet in balance with salty in a candy-like toffee bar. There are salted peanuts in there too
I dont bake often, but this is one recipe that I'll be putting in my holiday baking folder!
And look! To make it even easier, you start with one of those premade Cookie mixes.


Chocolate-Topped Peanut-Toffee Bars (Cookie Mix)
Prep Time:30 min
Start to Finish:3 hr 15 min
Makes:32 bars


Cookie Base
1 pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
Filling
1 cup butter, cut into small pieces
1 cup packed brown sugar
1 1/2 cups lightly crushed potato chips
1 cup salted peanuts
Topping
1 bag (12 oz) semisweet chocolate chips (2 cups)


1. Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
2. In large bowl, stir cookie base ingredients until soft dough forms. Press dough in bottom of pan. Bake 10 minutes or just until dough is set.
3. Meanwhile, in 1-quart saucepan, melt butter over medium heat. Stir in brown sugar. Heat to boiling, stirring frequently. Boil 1 minute, stirring constantly.
4. Sprinkle potato chips and peanuts over partially baked base. Pour brown sugar mixture over chips and peanuts. Bake 15 minutes longer or until surface is bubbly.
5. Sprinkle chocolate chips evenly over chips and peanuts; return to oven for 2 minutes to soften chocolate. Spread chocolate over filling. Cool completely, about 2 hours. Refrigerate 30 minutes or until chocolate is set. For bars, cut into 8 rows by 4 rows. Store covered at room temperature.
High Altitude (3500-6500 ft): In step 2, bake 12 minutes. In step 5, return to oven for 3 minutes.
